 | food colours Our food colours and flavours are based on natural raw materials. |  | additives We are dedicated to reducing additives within your application. |  | Brewers Yeast (Saccharomyces cerevisiae) Brewers Yeast (Saccharomyces cerevisiae) is a natural ingredient, which is traditionally produced by washing, recovering and drying the spent yeast grown during the fermentation process of beer / alcohol. The yeast is dried using a temperature which stops biological activity whilst maintaining its unique nutritional properties. Brewers yeast contains a natural mixture of high-grade protein, vitamins and minerals and provides an excellent cost effective source of ingredients to enhance the nutritional value of basic foodstuffs.
Key Features and Benefits
As one of the most concentrated natural sources of the B group vitamins, principally riboflavin, (Vitamin B1), thiamine (Vitamin B2) and nicotinic acid, brewers yeast is ideal for nutritional supplements and special tableting grades are available.
Contains a minimum 40% high-grade protein and consequently the 8 amino acids essential for good health.
Yeast protein also contains lysine, an essential amino acid which is limited in cereal protein.
Provides a natural source of minerals such as phosphorous, calcium and potassium.
Contains approximately 36% carbohydrate and more specifically oligosaccharides considered to have a pre-biotic effect.
Suitable for vegetarians.

Selenium is a mineral essential for human metabolism and is required in small amounts. Mammals can not manufacture selenium and therefore it must be obtained from the diet.
Selenium is a recognised anti-oxidant, and increasingly its more specialised role in metabolism has started to become appreciated.
Health benefits of Selenium*
Selenium is increasingly being viewed as a functional nutrient with both a role to play in the maintenance of good health and also in prevention of so called modern day diseases.1 As an anti-oxidant nutrient, selenium prevents the action of free radicals which are believed to be causative agents behind degenerative diseases such as premature ageing, cancer and atherosclerosis.2
Clinical trials have also indicated that selenium can have a role to play in combating oxidative diseases,3 enhancing the immune response,4 increasing male fertility,5 improving psychological mood scores6 and reducing the pain and stiffness in arthritis sufferers.7
Typical doses in these studies are greater than those recommended by the National Research Council.
The Yesto-Sel™ range of dried yeasts contains a certified quantity of selenium in a form suitable for supplement incorporation.

|  | Naturally derived colours orange Carotene can be extracted from a number of sources including algae, carrot and palm. Mixed carotenes offer good stability to heat, and pH change. In application mixed carotenes give a yellow to orange colour depending on concentration.
Annatto is obtained from the seeds of a small tree, Bixa orellana, cultivated in America, India and East Africa. The two major pigments, bixin (oil soluble) and norbixin (water soluble) both produce orange solutions.
Paprika, the oleoresin is obtained from dried, ground red peppers by extraction and further concentration. In final application paprika can deliver orange to red shades depending on concentration.
Carminic Acid, the cochineal extract is obtained from the Coccus cacti insect, which is principally cultivated and harvested in Central and South America. An aqueous extract is obtained from the dried female insects. This is then purified to yield carminic acid.
Carminic acid is water soluble and acid stable giving orange shades at low pH and becoming redder as the pH increases.
